With a long history, Gandour’s first factory opened in Lebanon in the 1800s. More than a century later, Gandour is now the maker of confectioneries extraordinaire. The Dabke is no exception. This sandwich cookie features two wafers surrounding a delicate lemon cream filling.

While the lemony goodness will satisfy your sweet tooth on its own, you can use these cookies to turn an ordinary cupcake into something special. Think of a cool glass of lemonade, a gentle airy lemon bar or the fresh citrus fruit on a summer day. Now turn that into a cookie-flavored cupcake! With a few simple steps you can create a zesty treat with loads of lemon and a subtle crunch. And, as a bonus, there’s a special cookie surprise at the bottom!

Here’s What You’ll Need:

  •  Gandour Dabke lemon wafer cookies
  •  White cupcake mix – You can use a boxed mix or your favorite recipe.
  •  White frosting – Again, you can use either a ready-made version or your own recipe.
  •  Optional: Yellow food coloring

Here’s What to Do:

1. Mix the cupcake batter. The specifics vary depending on the type of mix that you choose.

2. Place one cookie at the bottom of each cupcake liner.

3. Pour the batter into lined cupcake tins and bake.

4. Take the cupcakes out of the oven and let them cool. The cookie will create a solid bottom for the cupcake.

5. Crush the cookies. Put the whole Dabke wafers (including the lemon cream) into a food processor. If you don’t have a food processor, you can use a potato masher to crush them into a sand-like powder.

6. Stir the crushed cookies into the frosting. Leave a few pinches out for later.

7. Optional: Add a drop of yellow food coloring into the frosting mix to give it a lemon hue.

8. Frost the cupcakes.

9. Sprinkle the remaining cookie crumbles onto the top of the frosting. Don’t mix it in. Let it sit on top of the cupcake, giving it crunch and texture.
